Easy Pumpkin Cake in a Jar & Poem To Go With it!

Easy Pumpkin Cake in a Jar & Poem To Go With it!

There’s something about fall that makes me want to bake. Maybe it’s the cooler weather, maybe it’s pumpkin everything, or maybe it’s just a good excuse to make something sweet.

When my boys were younger, I loved finding simple recipes we could make together. Nothing too fancy, nothing that required perfect decorating, just something fun that let everyone get involved and usually made a little mess along the way.

It’s simple, kid-friendly, and really cute for a fall dessert, Halloween party, Thanksgiving table, or even as a little homemade gift.

What You'll Need

For the pumpkin cake:

  • 1 box spice cake mix

  • 1 can (15 oz.) pumpkin puree- (not pumpkin pie filling)

  • 2 eggs

  • 1/2 cup vegetable oil

  • 1 teaspoon cinnamon

  • Whipped cream or cream cheese frosting

  • Crushed graham crackers or cinnamon cookies for topping

  • Small mason jars or clear dessert jars

Let's Make It

1. Mix it up.
Preheat the oven to 350°F. In a large bowl, mix the spice cake mix, pumpkin, eggs, oil and cinnamon until everything is combined.

This is a great job for the kids. Give everyone a turn stirring!

2. Bake the cake.
Pour the batter into a greased 9 x 13-inch baking pan and bake according to the cake mix directions, usually about 25–30 minutes.

Let the cake cool completely.

3. Make some crumbs.
Once the cake is cool, cut it into small cubes or simply crumble it into pieces. There is no need for perfection here—which is one reason this recipe is so good to make with kids.

4. Fill your jars.
Now comes the fun part.

Add a layer of pumpkin cake to each jar, followed by a little whipped cream or cream cheese frosting. Add another layer of cake and another spoonful of topping.

5. Add the finishing touch.
Sprinkle crushed graham crackers or cinnamon cookies over the top. You can also add a little cinnamon, fall sprinkles or even a few mini chocolate chips.

Put the lids on and refrigerate until you're ready to eat them.

Make It Your Own

That's the best part about desserts in a jar, there really aren't many rules!! And who doesn't love that- LOL

Let the kids make their own jars and choose their toppings. Add caramel sauce, chopped pecans for the adults, mini marshmallows, chocolate chips or whatever sounds good.

A Little Fall Fun From OLovesM-add this Poem to the jar if you give as gifts:
